La Petite Maison's Bikini – How to Make It

We present an easy version of a beverage found on a new menu. It's a party-sized pre-mixed which is loaded with the flavours of a holiday season, making it ideal for hosting a holiday party. Save the extra citrus syrup you can use for brunch beverages, sweets, or for additional servings of the drink.

The Bikini Cocktail

Yields 10 people

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Premix (makes 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Method

To prepare the Cordial: Place every ingredients into a pan, heat until it reaches a light boil, agitating to dissolve. Next, take off the stove allowing it to cool entirely. Pour to a sterilised bottle, cap it and store chilled, it can be stored for up to four weeks.

Preparing the Batch Mix: Mix every spirits and syrup into one big jug, allow it to infuse for an hour, then strain , ideally through muslin, making it fully clarified.

When ready to serve: Measure 85ml of your premix into a stirring glass packed with ice, gently stirring carefully for a minute until cold. Pour into a frosted cocktail glass or similar, garnish with a few cranberries and finish with a brief mist of the essential oil over the top.
